Plum Sponge recipe

This delectable sponge recipe combines lots of traditional flavours, making for a rich, moreish sponge, punctuated with soft chunks of sweet tart fruit. This recipe calls for plums, but any soft, tart fruit could be used peaches would work well, as would strawberries.


180g butter
180g caster sugar
4 eggs
220g plain flour
1 tsp. baking powder
1 tsp. salt
1 tsp. vanilla extract
1 tsp. almond extract
10 plums

Method of Preparation:

  1. Peel, stone and halve the plums.

  2. Preheat the oven to 190C and grease and line a large baking tin. Make sure to use something big enough so that you can place all of the plums on top of the sponge with enough space in between the plums for the sponge to rise.

  3. Cream together the butter and sugar until completely smooth, pale and fluffy. Add in the eggs one at a time, beating after each addition.

  4. Mix in the almond and vanilla extract.

  5. Sift in the flour, baking powder and salt, and then mix well until you have a smooth batter.

  6. Pour the batter into the prepared tin and then dot the plum halves over the top.

  7. Bake the sponge for around half an hour.

Let the cake cool completely and then turn it out onto a wire rack. The plums should be juicy and sweet and should slightly be seeping into the sponge cake. Serve this cake with some whipped cream or some clotted cream.
